The project MAVRUD ZLATOVARH 2013 is joint venture between Winery Zlatovrah, University of Food Technologies - Plovdiv Department of Technology of Wine and Beer representative PhD student Miroslava Delcheva, Program „Students Practice" of the Ministry of Education and Science and consulting company STAMEO Ltd.

The aim of the project is scientific and technological research and combination of the potential of the grapes of the variety Mavrud in the region of village Zlatovrah and the village Novi Izvor with new source of technological schemes of five leading manufacturers of oenological products: FERMENTIS, ENARTIS, LALLEMAND, OENOBRANDS and CHR HANSEN.

The study also includes aging of wines in quality new barrels of French cooperage - MERCUREY, TARANSAUD, SYLVAIN, SAURY, BERTHOLOMIEU and ERMITAGE and Bulgarian manufacturers - VALOGA.

Under development is a new technological practice that will retain and increase in wine high natural values ​​of the antioxidant Resveratrol inherent in the Bulgarian variety Mavrud.

Partner in the project is the French laboratory DUBERNET, COFRAC ISO 17025 accredited.

Zlatovrah winery was founded by engineer Oenologist Plamen Petrov in 2006 in Zlatovrah village some 35 km from Plovdiv, 5 km. by Arapovo Monastery. The winery is in the process of reconstruction and applies for investment programs. The cellar has own Terroir with vineyards of unique variety Mavrud in the village Zlatovrah and work with long-term contracts for the purchase of red grapes from the region of Assenovgrad.
